Since opening in Spring 2014, Brickstone by St. John’s searched for a restaurant partner to anchor its retail space and showcase the New Urbanism concept. After significant investment of time and resources to identify the appropriate partner to complement the St. John’s brand, as well as meet the needs of St. John’s residents, staff, families, and surrounding community, a restaurant was secured in the beginning of Fall 2014.
That restaurant is now Joey B's at Brickstone.
Chef Joseph Brophy originally opened the doors of Joey B's in 1992 in Fairport, NY. He learned his craft the old-fashioned way, starting as a dishwasher when he was 16 years old and moving through progressively more responsible positions over the years. In 1982, Chef Brophy started working the line at the Strathallan Hotel. Two years later he was sous chef, and two years after that he was promoted to chef, a position he held until the hotel changed hands in 1989. From there, he travelled around the state, eventually accepting a two-year stint with Chef Jean Morel at L'hostellerie Bressane in Hillsdale, New York.

The addition of Joey B's is just another step toward new urbanism, which refers to highly walkable neighborhoods offering mixed-use spaces for residential, retail, and community use. The result is a vibrant community that is not secluded from the world outside, rather, it embraces it. Sidewalks lead in, out and around our whole senior community. We believe that makes for a better neighborhood.
